Ingredients:
- 4 cups fresh or frozen cherries, pitted
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon almond extract (optional)
- 1/4 teaspoon salt
- 1 pre-made pie crust (store-bought or homemade)
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the cherries, sugar, cornstarch, lemon juice, almond extract (if using), and salt. Toss until the cherries are evenly coated.
- Roll out the pie crust and place it in a 9-inch pie dish. Trim any excess dough hanging over the edges.
- Pour the cherry mixture into the pie crust, spreading it out evenly.
- Roll out the second pie crust and place it over the filling. Trim any excess dough and crimp the edges to seal the pie.
- Cut slits in the top crust to allow steam to escape.
- Bake the pie in the preheated oven for 45-55 minutes, or until the crust is golden brown and the filling is bubbly.
- Allow the pie to cool for at least 30 minutes before slicing and serving. Enjoy!
