  • 4 cups fresh or frozen cherries, pitted
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon almond extract (optional)
  • 1/4 teaspoon salt
  • 1 pre-made pie crust (store-bought or homemade)


  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cherries, sugar, cornstarch, lemon juice, almond extract (if using), and salt. Toss until the cherries are evenly coated.
  3. Roll out the pie crust and place it in a 9-inch pie dish. Trim any excess dough hanging over the edges.
  4. Pour the cherry mixture into the pie crust, spreading it out evenly.
  5. Roll out the second pie crust and place it over the filling. Trim any excess dough and crimp the edges to seal the pie.
  6. Cut slits in the top crust to allow steam to escape.
  7. Bake the pie in the preheated oven for 45-55 minutes, or until the crust is golden brown and the filling is bubbly.
  8. Allow the pie to cool for at least 30 minutes before slicing and serving. Enjoy!
